Over a decade in the making, Watershed Distillery Straight Bourbon Whiskey is our love letter to the craft of spirit making. It’s a handmade, small batch bourbon that is as distinctively complex as it is fiercely approachable. Rested in our signature char 5 barrels for 4 years and bottled at 90 proof, this bourbon represents all that we’ve strived for in our journey, one pour at a time. We recommend serving in a glass, not sitting on a shelf.

There’s no handed down recipe or family tree deep in the heart of bourbon country. Just a relentless drive to explore what it means to be our best every day. Our Bottled-in-Bond Bourbon is made in accordance with the Bottled-in-Bond Act of 1897. Each bottle represents a snapshot of who we were in a single season, aged over 4 years, and bottled at 100 proof.

Bottled-in-Bond comes with the guarantee that the bourbon you’re enjoying is 100% distilled, aged, and bottled at Watershed Distillery. Made from ten hand selected barrels chosen by our founder and head distiller, Greg Lehman, it’s our way of celebrating over 13 years of independent distilling and inviting you to experience the best our distillery has to offer.

Uncut Unfiltered Bourbon
Untouched. Unbothered. Uncut. Unfiltered.
This rare bourbon spends over four years in barrels until it is ready to be bottled without added water or filtration. Uncork each bottle to find exactly what was in the barrel—bourbon that is untouched, unbothered, uncut, and unfiltered.
Awarded a gold medal at the Fall 2023 John Barleycorn Awards, Watershed’s Uncut Unfiltered Bourbon is aged in a unique selection of char-5 barrels made at an Ohio cooperage. Traditional whiskey barrels are char-4 meaning the barrels that hold this special whiskey sit atop the flame a little longer and impart the incendiary and award winning flavors and aromas of Watershed’s Uncut Unfiltered. Creating whiskey means mastering the elements within your control and accepting that the barrel always has the final say.
On the nose of this unique bourbon find aromas of split vanilla bean, toasted oak, clove and allspice. The vanilla and toasted oak also come through on the palette along with notes of both apricot and walnut with a lingering finish of warm spice and herbal tea.

We asked our award winning team of bartenders to create our Old Fashioned the way they would if you were seated across from them at the bar. We use the same ingredients that brought this iconic drink into prominence; real bourbon, bitters, sugar, and Ohio-made cherry juice. Bottled at cocktail strength, you get exactly what you want. Expertly mixed and ready to pour over ice, it’s Old Fashioned with a modern approach.

When Greg Lehman quit his job to open a distillery, he turned his back on convention, on expectation, on conformity. It started as an idea between two friends to trade in the comfort of the known, for the dream of creating something bigger than themselves. It was a wager that was fueled by passion, grown by community, and backed by sheer will.
That entrepreneurial spirit, energy, and belief in the dream, is why we’ve been creating award-winning spirits since 2010, and will continue to for years to come. Forever forging our own path, in pursuit of our next watershed moment.
