The maiden whiskey to be 100% distilled and matured by the multi-award winning Clonakilty Distillery. Matured in ex-Bourbon, Amontillado sherry and Oloroso sherry casks at our Atlantic Ocean Warehouse
On the palate, Vanilla, caramelized pear and apple, gives way to a gentle wood spice, dark chocolate and orange

Double Oak Cask
Irish Whiskey
A premium marriage of Irish malt and grain, this whiskey is matured in ex-bourbon casks, and finished in virgin American oak; and shaved and re-toasted ex-red wine European oak casks.
On the palate, warm spices – cubeb pepper and ginger with notes of fresh cut grass, hazelnut and almond.

Port Cask
Irish Whiskey
Triple-distilled and gently cut with water naturally filtered through our coastal rock formations. At our Atlantic Ocean warehouse, we finish this whiskey in port casks from the Douro Valley, which imparts a dark fruit notes and soft spice.
On the palate, very fruity with cherries, raisins and soft spices, some chilli and cardamom

Single Malt
Irish Whiskey
Double-distilled premium Irish single malt finished in red wine barrels from Bordeaux, France. Gently cut, non-chill-filtered with minimal filtration, and aged at our Atlantic Ocean warehouse imparting a distinctive maritime complexity to this well-rounded Irish Whiskey.
On the palate, Oak Spice, cinnamon, clove, nutmeg, and vanilla.

Whey based Irish spirits from Clonakilty Distillery

Minke
Irish Gin
The base spirit used to make Minke Gin is derived from whey, produced from our 9th generation family farm near Galley Head Lighthouse. This gives a unique velvety texture and mouthfeel to each delicious drop.
On the palate, fresh n’ fruity, zesty, later the rock samphire from our local cliffs becomes obvious with some green fennel-like notes.

Minke
Irish Vodka
The base spirit used to make Minke Vodka is derived from whey, produced from our 9th-generation family farm near Galley Head Lighthouse. This gives a unique velvety texture and mouthfeel to each delicious drop.
The luxuriously smooth vodka can be sipped easily or enjoyed over ice with a splash of tonic and a wedge of lime..
